Freshly returned from three weeks in Northern Thailand, we will share some of the most exciting teas, flavors & discoveries from our journey.
The workshop will focus on wild & organically grown teas from the mountains around Chiang Mai. We will taste miang, the fermented tea leaves traditionally eaten across Northern Thailand, alongside other notable teas, including a traditional smoky green tea made by the Karen people, often enjoyed with a pinch of salt; a remarkable wild black tea; and our beloved Wild Thai Tea, a five-layer roasted black tea made for Thai-style sweet milk tea. Alongside Camellia sinensis, we will share several traditional Thai herbal gems: butterfly pea, roselle & bael.
As a special treat, we will also bring back some of Chiang Mai’s best-known sweets & snacks, including kalamae, the chewy coconut and sticky rice candy & khao taen, crispy Northern Thai sticky rice cakes glazed with cane sugar.
We look forward to sharing a tea culture shaped by ancient forests, urban jungles, fermentation, indigenous knowledge & the meeting of Thai, Chinese and Southeast Asian traditions. Expect unusual flavours, a little history & several things that are rarely tasted outside the region.
